The amount of tuna I have eaten this summer is borderline embarrassing. Whenever I fail to plan ahead and don’t have anything to bring to work for lunch, I always grab a can of tuna! (I buy the bulk packages from CostCo … yeah, it’s serious).

Disclaimer: your coworkers might hate you for eating smelly tuna every day, but ignore them. Delicious food to fuel your day is more important than worry about your reputation of being that girl who brings smelly lunch every day. Trust me. 

I know summer is almost over, but I will seriously be eating tuna salad all winter long. You can even turn these recipes into tuna melts with cheese on top! I prefer my tuna salad recipes to be healthy, grain-free, and super quick and easy to whip together.

Here are four 5-minute healthy tuna salad recipes you must try next time you don’t have a work lunch plan. Keep Greek yogurt or light mayo at work if your work has a refrigerator to make it even easier on yourself! Also, get creative with throwing any vegetables in that you might have on hand.

Apple Pecan Tuna Salad

Okay, excuse the iPhone photo … these were taken at lunch when I was too hungry to worry about white balance! This one’s a little out there, but you have to trust me. The sweetness and crunch of the apples adds a wonderful flavor element to this simple and healthy tuna salad recipe. Add in some pecans and you have a tuna salad that’s ready for fall!

1 can tuna, drained

1/2 apple, diced

3 tablespoons pecans

1/2 stalk celery, diced

1-2 tablespoons plain Greek yogurt

lemon juice

salt and pepper to taste

Mix it all together and eat!

 

Avocado Tuna Salad

This one’s my personal favorite. I don’t even like avocado, but mixing it with tuna makes an incredibly creamy, SO delicious tuna salad. Don’t forget a squirt of lemon juice!

1 can tuna, drained

1/2 avocado

lemon juice

salt and pepper

Smash the avocado and mix with the rest of the ingredients!

Last but not least – add pesto to your tuna salad then throw in whatever veggies you have on hand! Yum!
