Grain-free Paleo Pumpkin Protein Waffles are super easy to make and can be made ahead of time and frozen! They’re packed with protein, so they’ll keep you full all morning long.

Paleo Pumpkin Protein Waffles

Waffles are great. They’re easy to make, perfect for freezing, and (most of all) they’re delicious. These Paleo Pumpkin Protein Waffles are extra great because they’re a grain-free waffle recipe that’s packed with protein, so all you need is one for breakfast and it will keep you full for hours.

Now, these waffles didn’t get that crispy outside that you strive for with waffles, but that might be because I have a cheap waffle iron. Regardless, these are full of pumpkin flavor and super satisfying if you like sweet treats in the morning! I froze these right after making them, then I just stick one in the toasted oven from frozen and it’s good to go!

Top these Paleo Pumpkin Protein Waffles with maple syrup to make these extra delicious, or almond butter for a boost of protein.

Speaking of protein, have you heard of Full Psycle? It’s an amazing new full-body workout that just moved in to my neighborhood! It’s a spin class that incorporates weight training, so you’re working your legs, butt, abs, and arms all at the same time. The class is set in a dark room with neon lights and loud music, so no one can see you sweat or hear your heavy breathing. SCORE!

The coolest part is, the amount of energy you’re exerting is displayed on a TV monitor at the front of the class, so you’re essentially competing against everyone else in the class to work the hardest! Anyone who knows me knows how competitive I am, so I’m totally in love with this idea. I burned 510 calories in 45 minutes (and that was on a day when I was running on 4 hours of sleep)! Hehe.

After that I needed some of these Paleo Pumpkin Protein Waffles to recover. For sure.
