The things women do to make themselves beautiful is bananas. And in my opinion, underappreciated.

My beautiful cousin got MARRIED, and bless her heart she asked my sisters and I to be in the wedding. Although I’m almost positive nobody was looking at me (I mean come on, the bride’s dress was stunning … nobody really pays attention to the bridesmaids during the ceremony right?), I also knew that those photos were going to be around for a loooong time, so making ourselves look as good as possible was a must.

In college, I liked to think of myself as a free spirit hippy type that didn’t concern myself much with how I looked – but rather, focused on my extracurriculars and having fun with my friends. In reality, I just didn’t have money to spend on looking good. Haircuts were few and far between, all my clothes were from the most inexpensive store at the mall, and spending $30 on face makeup was the most indulgent purchase I made toward my appearance.

Now that I’ve entered the world of you-a-grownup-Jordan-get-your-shit-together, I have come to realize that female grooming is expensive, time consuming, and PAINFUL. A $200 haircut and highlight is just the basic upkeep that needs to be done – and you better believe I delay that nonsense as long as my pride can handle.

Then there’s eyebrow threading. I’ve only recently made the switch from waxing to threading. Pros: less expensive and lasts longer. Cons: I want to cry the entire time it’s being done.

Since pastiness runs in the family, we also experienced spray tanning for the first time! To our luck, our cousin actually owns a spray tanning gun. But four girls standing in bikinis, in a garage, when it’s 20 degrees outside, at 11 p.m. after the rehearsal dinner, does not a good time make. (Actually, it was quite fun. Lots of laughs.)

Even the most painless manicure went awry. What started as a nice shoulder rub while my cuticles were soaking, ended in my manicurist going to town on a knot in my back for 10 minutes. Not what I signed up for.

Then there’s having someone else shove bobby pins into your head, poking yourself in the eye with your fake eyelashes, and getting blisters from your heels to round out the fun. (Okay, maybe I’m exaggerating … but these are definitely real risks if you’re not careful).

I’d be lying if I said I didn’t love pampering myself. And what better excuse to do it up than this joyous occasion. I’ll post a pic when they’re published. Twas a jolly good time.

Breakfast Stuffed Sweet Potatoes

Anyhoot – Breakfast Stuffed Sweet Potatoes. If you’ve ever made sweet potato breakfast hash, this is like a version of that! The filling sweet potatoes are the perfect boat to hold eggs, bacon and cheese. Best of all, you can customize this recipe to include any veggies and meat you like.

I ate half of one half of this sweet potato as a serving, using fork and knife (skin and all). If you prefer, you can scoop out the filling and leave the skin. Breakfast Stuffed Sweet Potatoes are the perfect recipe to include in your meal prep because they reheat quite nicely. Or, if you’re looking for a Thanksgiving breakfast recipe – it doesn’t get much better  than this.

I used the microwave to prepare this (duh), but it tastes much better to bake the sweet potatoes in the oven if you’re bored and have nothing else to do and like watching potatoes bake for an hour. Hehe.

Breakfast Stuffed Sweet Potatoes

Breakfast Stuffed Sweet Potatoes are an easy, filling, healthy breakfast recipe that’s perfect to serve at brunch or include in your meal prep.

Ingredients

  • 1 sweet potato
  • 4 eggs
  • 2 slices turkey bacon
  • 1/4 cup low-fat cheese
  • Salt and pepper, to taste

Instructions

  1. Wash the sweet potato and pierce it with a fork. Wrap it in a damp paper towel and microwave for 5 minutes or until tender, flipping it over halfway through.
  2. Meanwhile, fry the bacon in a pan until crisp. Remove, crumble, and set aside.
  3. Scramble the eggs, add salt and pepper to taste, and cook them in the pan until just cooked.
  4. When the potato is cool enough to handle, cut it in half and scoop out about half the potato from each half. Reserve for later use. (I microwaved mine and mixed it with peanut butter for breakfast).
  5. Fill each potato half with eggs, bacon, and cheese. Microwave for 30 seconds more until the cheese is melted. ENJOY!
  6. For oven - bake the sweet potatoes at 400 degrees F for 45 minutes. Follow the same steps, then broil for just a few minutes to melt the cheese.

Didn’t realize until step 6 that I could have baked this instead! The microwave was fine, but a little disappointed that was revealed so much later.
