Chicken salad is the best salad. Why? Because it has mayonnaise instead of dressing, and minimal vegetables to get in your way.

Unfortunately, mayonnaise and non-vegetables do not exactly fall into the health category, so I gave classic chicken salad a little makeover. Although I can’t remember where I originally got this recipe, I’ve been making it for years. Greek yogurt is used in place of some mayonnaise to lighten it up, yet it’s still super creamy and delicious.

You can use all Greek yogurt, or do a mix of half and half with mayonnaise. Either way, this lightened up chicken salad recipe has a delicious mix of ingredients that make a great lunch. Greek Yogurt Apple Walnut Chicken Salad has chunks of crispy apples, walnuts, grapes and chicken.

To cook the chicken, I usually boil it for about 20 minutes or bake it at 375 degrees F.
