You’d think I would be an old pro by now, but rather I’ve just come to realize how much random crap I have. Like, is there any reason to still have that love letter from high school from that guy you don’t speak to any more? (I wish I was kidding).

In the midst of my apartment relocation chaos, easy recipes are are life-savers. Seeing as I had a half-empty box of quinoa and a jar of marinara sauce to use up, I knew I just had to recreate one of my favorite meals from a Chicago chain restaurant – Protein Bowl.

This copycat Protein Bowl recipe is a homemade version of their Healthy Parm. Essentially, it’s just quinoa, chicken, marinara and Parmesan cheese. It really can’t get any simpler than this 4-Ingredient Healthy Chicken Parmesan Quinoa Bowl, yet you’ll feel like your splurging on a bowl of carb-filled Italian food.

You can prepare your quinoa ahead of time, as well as dice your chicken to make this lunch on the fly. I even used a grocery store rotisserie chicken to make it extra easy! So all I have to do for weekday lunches is nuke the quinoa, chicken, marinara and Parmesan in the microwave.

Talk about the best 4-ingredient, 5-minute healthy lunch ever.

Although the chicken is not breaded and fried, this meal will definitely leave you satisfied. The quinoa makes a great pasta substitute if you’re trying to cut down on processed carbs.
