I’m officially all moved in to my new apartment! Yay for living within running distance of the beach.

I’ve learned that there’s just one rule to surviving apartment living … every square inch of space must be used to shove your shit into. Every closet is full, my book case will become a random crap catch-all, there’s not an empty inch of space under my bed, and I’m currently stowing my bras in my nightstand. Fitting your crap into a city apartment takes a whole lot of creativity if you don’t want it to look cluttered. If you need help, I’m practically a professional by now.

So all this moving has made me HUNGRY. I finally got settled in enough to make my first meal in the new place – this Chicken Sausage Skillet Pasta! This is one of my favorite weeknight meals for when I’m feeling super lazy. Plus it makes great leftovers. Win, Win, Win. (The third Win is because pasta is always a win).

Chicken Sausage Spaghetti Skillet

There is nothing innovative about this recipe. It’s a simple skillet pasta recipe that can be adapted in so many ways to fit your taste. Throw in any vegetables in your produce drawer, use up any leftover cheese you have, or substitute any meat you have for the chicken sausage!

What I love so much about this Chicken Sausage Skillet Pasta is how simple it is. Cherry tomatoes make up a fresh-tasting sauce and mozzarella cheese finishes it off! You won’t miss the canned tomato sauce in this recipe.

Not to mention, it takes under 30 minutes to make!

You can use pretty much any pasta you want with this dish – I think it would be great with gnocchi or rigatoni. I also might try to add fresh basil or spinach! (My local grocery store was out of fresh basil, or that definitely would have been added to the mix). Oh, city living.

Sometimes the simple recipes are the BEST. This one looks incredible! And I can relate to stuffing belongings into every square inch of a home. That's how we live! :)
