I’m on a mission to eat more vegetables! I’ve been listening to so many podcasts on gut healing and healthy living, and there seems to be one thing all nutritionists agree on: eat more vegetables!

Now, I’m on a mission to fill my plate at least half with vegetables. It’s been a really fun challenge to come up with creative ways I can include more vegetables into every meal.

These Spicy Shrimp Peanut Noodle Bowls are one of my favorite veggie-packed meal prep recipes or dinner recipe that your whole family will love!

Spicy Shrimp Stir Fry Noodle Bowls

I made this recipe for my boyfriend to take to work, and he couldn’t stop talking about how good it was! Score!

With brown rice noodles, stir fried vegetables, shrimp, and a spicy peanut sauce, this spicy shrimp peanut noodle stir fry is one of my all-time favorite recipes to make.

It comes together super quickly and tastes amazing! I’ve been making a version of peanut sauce stir fry since college because of how darn good it is every time.

Spicy Shrimp Stir Fry Noodle Bowls

If you don’t have brown rice noodles, spaghetti noodles or other stir fry noodles will do.

Feel free to throw in any vegetables you happen to have in your refrigerator for this stir fry recipe! I even threw in some asparagus I had on hand.

If you or your family aren’t into the spice, just omit the sriracha. Or, if you love it spicy, take it up a notch with some chili garlic sauce.

To make sure you get that extra dose of vegetables, I like serving these noodles on a big bed of greens. I used arugula and microgreens from Whole Foods.

I also love serving kimchi on the side … it’s great for gut health!

Spicy Shrimp Stir Fry Noodle Bowls

Spicy Shrimp Peanut Noodle Bowls

Spicy Shrimp Peanut Noodle Bowls make the perfect meal prep or dinner recipe with shrimp, noodles, peanut sauce, and kimchi.

Ingredients

For the stir fry

  • 8 ounces brown rice noodles
  • 1 Tablespoon sesame oil
  • 1 cup carrots, cut into matchsticks or shredded
  • 1 red bell pepper, sliced
  • 1 cup broccoli, chopped
  • 1.5 Tablespoons fresh ginger, peeled and chopped
  • 1 Tablespoon garlic, chopped
  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup green onions, chopped
  • 1/2 cup cilantro
  • Chopped peanuts, for garnish

For the sauce

  • 1/2 cup creamy peanut butter
  • 1/4 cup warm water
  • 3 Tablespoons soy sauce
  • 2 Tablespoons honey
  • 2 Tablespoons sriracha
  • 2 Tablespoon lime juice
  • 1 Tablespoon sesame oil
  • 1 cup kimchi
  • 2 cups greens (I used arugula and microgreens)

Instructions

  1. Cook noodles according to package directions. Drain and set aside.
  2. Meanwhile, mix all sauce ingredients together and set aside.
  3. In a large wok or pan, add sesame oil, carrots, pepper, broccoli, garlic and ginger. Cook until carrots are tender.
  4. When the vegetables are almost cooked through, add shrimp to the pan and cook about 1 minute per site, just until pink.
  5. Add sauce and noodles to the pan and mix to combine. Stir in green onion and cilantro. Top with chopped peanuts.
  6. To assemble bowls, divide greens, kimchi and noodles amongst 5 bowls. Enjoy!

Notes

If you don't want it spicy, omit the sriracha.
