4-Ingredient Paleo Panna Cotta

Well hurray for desserts that are dairy-free, grain-free, paleo friendly, and just generally good for your health! I’ll admit that I have never tried Panna Cotta, but ever since my sister told me she made a paleo version, I just had to try making coconut paleo Panna Cotta for myself. This paleo dessert recipe is super easy to make and tastes amazing – it’s similar to a pudding texture with a great coconut flavor.

I served mine with homemade Blueberry Chia Seed Jam, but this would also be great with any fresh fruit on top, extra honey, or any jelly or jam.

Ingredients

  • 1 can full fat coconut milk, divided
  • 1 tablespoon unflavored gelatin
  • 1/3 cup honey or other liquid sweetener of choice
  • 2 teaspoons vanilla extract

Instructions

  1. Pour 1 cup coconut milk with the gelatin in a small saucepan and let sit for about 3 minutes.
  2. Add in the vanilla, then slowly heat the milk until the gelatin dissolves, stirring constantly for about 5 minutes, but don't bring it to a boil.
  3. Pour in the remaining milk and honey and stir to combine. Remove the pan from the heat and let cool about 10 minutes.
  4. Pour the mixture evenly into four small bowls, cover with plastic wrap, and refrigerate at least a couple hours or overnight to cool and set.

    If I want to make twice as much panna cotta as this recipe makes, should I just double all of the ingredients? I'm specifically concerned whether I should double the gelatin, because I love the creaminess of this recipe and I don't want to mess it up! Please respond ASAP I'm serving this in two days. Thanks!

      Hi Susan - yes, you should be able to double the recipe and not lose the creaminess.
