Crockpot Chicken Cacciatore with Artichokes

I know I’m not supposed to say I’m busy because everyone is busy …. but I’m going to say it anyway. MY LIFE IS SO BUSY.

Between two jobs, a blog, wedding season, working out, and the social life of a 20-something, I can barely find time to shower. That’s why I LOVE healthy crockpot recipes that are as easy as dumping the ingredients in and letting it cook. Sometimes I even let the crockpot cook while I sleep! Or while I’m at work. Then, I come home to a fully prepared meal and a delicious smelling kitchen.

Now, I can’t actually take full credit for this recipe because my mom made it and offered to let me share it! Isn’t she cute? She’s the one who turned me onto the low-carb lifestyle and we often share recipes, love to cook healthy meals together, and now she’s even contributing to my blog! This is one of her favorite easy meals to make during the week for lunches.

Serve this Crockpot Chicken Cacciatore with Artichokes over spaghetti squash or zucchini noodles for a delicious paleo dinner or lunch!

Crockpot Chicken Cacciatore with Artichokes

Ingredients

  • 1 medium sized onion, chopped
  • 1-2 zucchini, thinly sliced
  • 1.5 pounds boneless skinless chicken thighs
  • 3-5 cloves garlic, chopped
  • 2 14-oz cans organic fire roasted tomatoes
  • 2 6-oz cans organic tomato paste
  • 1 14-oz can organic artichoke hearts, drained
  • 1 teaspoon fresh basil, chopped
  • salt and pepper to taste

Instructions

  1. Spray the crockpot with non-stick spray and line it with chopped onion and zucchini. Lay the chicken on top of onion. Sprinkle chopped garlic over chicken.
  2. Add a layer of tomatoes and tomato paste, followed by artichoke hearts.
  3. Evenly sprinkle basil, salt and pepper over the top, and cook on low for 6-8 hours or high for 4-6 hours.
  4. Serve over spaghetti squash for the perfect Italian paleo meal!
