This Pumpkin Chia Pudding Parfait is a decadent dessert, breakfast or snack made of pumpkin pie chia pudding and Noosa Pumpkin Yoghurt! 

Pumpkin Chia Pudding Parfait

Have you heard of Noosa Finest Yoghurt? Chances are you’ve probably seen it at your local grocery store. It’s pretty hard to miss in its trendy packaging. There’s just something about a well-design tub of yogurt that makes you want to buy it. Or is that just me?

Well, I would suggest following that desire to buy the cute tub of yogurt because, not only is Noosa Yoghurt cute, it’s also deeee-licious. And it’s made from happy cows! Yogurt is just one of those foods that is largely hit or miss for me depending on the specific brand. No one brand of yogurt tastes the same, and I can honestly say that Noosa is one of my favorites. When I saw the pumpkin flavor at Target – coincidentally one of my favorite stores – I knew that cute tub needed to come with me. Then I ate it in two … eerr … one sitting.

I knew it would be the perfect addition to this Pumpkin Chia Pudding Parfait. In the words of one of my favorite donkeys, “Aint nobody don’t like no parfait.” It’s just a fact, people.

This Pumpkin Chia Pudding Parfait is layered with pumpkin pie chia seed pudding, nuts, and Noosa’s pumpkin yoghurt. It’s an amazing breakfast, snack, or even dessert that will fill your belly with happiness and keep you going all morning.

Pumpkin Chia Pudding Parfait

Ingredients

  • 1/2 cup pumpkin puree
  • 2 tablespoons chia seeds
  • 3/4-1 cup unsweetened vanilla almond milk
  • dash of vanilla extract
  • 1/2 or more teaspoon pumpkin pie spice
  • 1 tablespoon maple syrup
  • 1 tub Noosa Pumpkin Yoghurt (or any yogurt of your choice)
  • 1 cup pecans or walnuts

Instructions

  1. In a large bowl or storage container, combine pumpkin, chia seeds, milk, vanilla, pumpkin pie spice, and syrup. Stir, cover and refrigerate at least a couple hours or over night until it thickens. You may need to stir and add more milk throughout to reach desired consistency.
  2. Layer chia pudding, a handful of nuts, desired amount of yogurt, more chia pudding, and more nuts on top to create the parfaits.

    I have been begging my local grocery store to get the pumpkin flavor of Noosa. Now I'm going to hound them until they do. This looks so good.

      Hound away, Christie! The pumpkin flavor is so delish - but I'm biased because I love pumpkin anything. :)
