Egg Roll In A Bowl

Egg Roll In A Bowl is a low-carb recipe for a Chinese takeout favorite. All the flavors of an egg roll in a super easy, healthy one-pot recipe … without the egg roll wrapper!

Now that I’ve officially entered adulthood, gone are the days of “parties” that consist of telling everyone to BYOB and “picking up” is as far as cleaning goes.

Nope. Now that I’m an adult, parties mean scrubbing every inch of the apartment, cooking/baking themed treats, and of course providing refreshments for guests.

And it’s a lot of work.

I hosted a Halloween party this year- complete with spooky sangria, mini mummy pizzas, buffalo chicken dip, Halloween cut-out cookies, and more! Although I spent the better part of the entire week preparing – I’d say it was a success!

Will all that Halloween prep, I needed a quick and easy dinner idea, and this Egg Roll in a Bowl was the perfect one.

Allow me to list all the things I love about this Egg Roll in a Bowl Recipe …

  1. The name rhymes.
  2. It’s a one-pot recipe (hooray for fewer dishes).
  3. Low carb = I can eat as much of it as I want.
  4. Budget-friendly! Cabbage is cheap, and this recipe makes a lot to eat all week.
  5. Speaking of eating all week, it makes great leftovers!

Okay I’ll stop there but just trust me on this – Egg Roll in a Bowl tastes just like the inside of an egg roll, but without the wrapper! Toss everything in one skillet and cook until it’s done. It doesn’t get much easier than that.

In about 20 minutes, you’ll have a delicious meal ready to serve. Plus, I ate this for lunch the next few days after making it and I would argue that it tasted even better!

Ingredients

  • 1 pound ground country sausage
  • 1/2 head cabbage, shredded
  • 1 cup shredded carrot
  • 1 teaspoon sesame seed oil
  • 1/2 cup low sodium soy sauce
  • 1 teaspoon rice vinegar
  • 5 cloves garlic, minced
  • 1 teaspoon ginger
  • sliced green onion
  • sesame seeds (optional)

Instructions

  1. In a large skillet, brown sausage.
  2. Meanwhile, combine sesame seed oil, rice vinegar, garlic, soy sauce and ginger in a small bowl and set aside.
  3. Add the cabbage and carrot to the skillet and toss to combine. Stir in the soy sauce mixture.
  4. Cover and cook until the vegetables are soft, about 15 minutes.
  5. Garnish with green onion and sesame seeds.

    OMGEEEE….I just made this but in a gluten free version with gluten free soy sauce. I used .5 pound lean ground turkey and about 5 ounces of shredded left over sirloin roast to sub for the meat. At the end I added to eggs into the mixture and let them scramble up with all the juices. My husband claimed this as one of the best meals I have made in a long time! Thank you from a gluten intolerant girl, who was craving some asian food. It was easy to do the changes…..My husband just said to put this on our menu plan. He said next time lets try it with some shrimp or shredded chicken…..SO GOOD! THANK YOU!

    Delicious! Thanks so much for this...I am trying to find more low/no carb recipes my husband and I will both enjoy, and this is winner! I was being lazy so I used a bag of coleslaw and it worked great. I also used a pound of lean ground beef, and I cut the soy sauce a bit, even the low sodium tastes too salty for my husband sometimes. I really like Jennifer's suggestion for the meat substitution and egg add and will likely try that another time. This is a wonderfully easy one-pot meal, but last night I served it with some fresh green beans sauteed in a tad of coconut oil. Thank you!!

    My family loved this dish - I had ground turkey meat that I seasoned w sausage seasonings, added the veggies and also shredded zucchini. No rice wine vinegar (Trader Joes had a good one but it's not been in their store since I last looked) so I substituted apple cider vinegar. I added a little Sriracha Hot Chili Sauce. It was a fair bit of prepping but worth it. I would probably cut down the soy sauce next time, but not by much. if I wasn't feeding a 20 yr old son, we would've had lots of leftovers!! Thank you for this recipe!

    Question... Recipe calls for country sausage but directions say to brown the ground beef? Could you please clarify. Is it breakfast sausage? Recipe sounds so yummy I hate to mess it up

      Hi Laurie! It's ground country sausage, like Jimmy Dean brand! It's typically found in the breakfast meats section of the grocery store near sausage, bacon, etc.

    Excellent recipe. I love how it can be tweaked for personal tastes. I used savoy cabbage because that's what I had and also added shiitake mushrooms.
