Need a super duper easy appetizer recipe that will impress your friends? Look no further. These 2-Ingredient Homemade Baked Mozzarella Sticks are a skinny version of the American fried food favorite. 

2-Ingredient Homemade Baked Mozzarella Sticks

Whenever I think about mozzarella sticks, I think about my rebellious middle school days.

When you grow up in a small farm town, you have to create your own ways to entertain yourself. And when you’re in middle school and boy crazy like I was, that typically involves following your “crush” around where he and his friends went. I digress.

There was a small drive-in a couple blocks from the middle school, and all the “cool kids” would walk there to order mozzarella sticks. Well, the only problem was that my mom knew that I mainly wanted to go there for the boys and not the fried cheese (man how things have changed), so she didn’t let me go!

Of course, looking back I thank her for keeping me in line (or trying to), but at the time I thought it was unfair and cruel and I knew everything because I was 13 years old and that pretty much meant I was an adult ready to make my own decisions in life. Haha. Oh, middle schoolers.

Now-a-days, eff the boys and BRING ON THE FRIED CHEESE. Or, in this case, BAKED cheese. Because I don’t still go to basketball practice 6 days a week.

I can’t take credit for this recipe for 2-Ingredient Homemade Mozzarella Sticks because it’s been on my Pinterest feed since ‘Nam, but I can tell you how super-de-duper easy they are to make … and delicious! All you need are string cheese and egg roll wrappers and you’re about 30 minutes from healthier homemade mozzarella sticks.

2-Ingredient Homemade Baked Mozzarella SticksMake sure you roll these babies tight, and try not to break the egg roll wrappers, to avoid the cheese oozing out when it melts. I rolled some starting at a corner of the wrapper, and some starting perpendicular to the edge of the wrapper, and the latter definitely worked out better.

You can also make these using wonton wrappers. Just cut the string cheeses in half and get ta rollin’!

Serve with marinara and voila! A skinny appetizer recipe everyone is sure to love.

Ingredients

  • Mozzarella cheese sticks (string cheese)
  • Egg roll wrappers

Instructions

  1. Preheat oven to 400 degrees F and spray a baking sheet with cooking spray.
  2. Place a cheese stick on one end of an egg roll wrapper. Fold in the sides, then roll it as tightly as you can, until you get to the opposite edge of the wrapper.
  3. Use a damp finger or a brush to seal the edge of the egg roll wrapper. Place on the baking sheet. Repeat with desired number of cheese sticks.
  4. Spray or brush the top of each cheese stick with oil. Bake for about 10 minutes, remove the pan from the oven, flip over the sticks, spray with more oil, and continue baking for about 8 minutes or until golden brown.
  5. Serve with marinara sauce.
