It’s official. I’ve discovered the cure to any sickness. I’m not quite sure if I should let my secret out here without patenting it first.
I mean, this is revolutionary stuff. It has about a 80% success rate for curing any cold or sore throat of mine within 48 hours.
Okay, I guess I’ll tell you since being sick is the worst, and because I’m feeling generous.
The secret to curing any sickness is: CHUGGING ORANGE JUICE.
Dead serious. As soon as you start to get that tickle in your throat, buy a gallon of OJ and drink the whole thing. You’ll be better in no time. You heard it here first. (Probably not, but I digress).
So now that we’re all sniffle-free and full of vitamin C, let’s talk about One Pot Italian Chicken Sausage and Peppers! This easy one pot recipe is perfect for those who hate doing dishes.
It all cooks in the same skillet and is super simple to make! You can serve the chicken sausage on Italian rolls as a sandwich, or over pasta, mashed potatoes, or caluflower mash (as I did).
This One Pot Chicken Sausage and Peppers recipe is definitely one you’ll keep in your arsenal.
Ingredients
- 1/4 cup extra-virgin olive oil
- 1 pound chicken sausage (any flavor)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium yellow onion, sliced
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 4 garlic cloves, chopped
- 2 tablespoons tomato paste
- 1 cup Marsala wine
- 1 (15-ounce) can diced tomatoes
- 1/4 teaspoon red pepper flakes, optional
Instructions
- Heat the olive oil in a large skillet. Add the chicken sausage and cook until nicely browned on both sides. Remove and set aside.
- Add in the bell peppers, onions, salt and pepper and cook until soft.
- Next, add the oregano, basil, garlic, tomato paste and Marsala wine. Stir to combine, scraping the bottom of the pan with a wooden spoon. Bring everything to a simmer.
- Add the diced tomatoes and red pepper flakes if using. Stir everything together, then add back in the chicken sausage. Continue to cook for about 20 minutes, until the sauce is thick.
- Serve in buns as sandwiches, or over cauliflower mash like I did!
