Prosciutto and Parmesan Baked Asparagus

Ahhhhhh-sparagus. It’s just so good. Especially when you cover it with prosciutto and Parmesan cheese. AmIRight?!

I actually can’t take credit for this recipe for Prosciutto and Parmesan Baked Asparagus because my sister dreamed it up and made it for me, but it was just such a beautiful work of art that I knew I had to share this one with the world.

I mean, what’s better than some Italian meats and cheeses to make your vegetables fun to eat?

Prosciutto and Parmesan Baked Asparagus

My sister, mom and I went strawberry picking in North Carolina and just had to grab a bunch of local asparagus as well. This might be my favorite new preparation of the beloved spring veggie. So cheesy and delicious … I could probably eat this whole pan just to myself.

I would suggest just guesstimating on the amounts – use your judgement. If you want to throw on an extra handful of cheese, by golly be my guest. You may also substitute bacon for the prosciutto as a budget-friendlier option.

Ingredients

  • 1 bunch asparagus
  • 2 slices prosciutto, chopped
  • Shaved Parmesan cheese
  • Olive oil
  • Salt and pepper

Instructions

  1. Preheat oven to 425 degrees F.
  2. Snap off the ends of the asparagus and discard. Chop asparagus into pieces and lay out on a cookie sheet. Sprinkle with salt and pepper, drizzle with olive oil, and toss to combine.
  3. Spread them back out evenly on the pan and top with Parmesan and prosciutto. Bake for 15 to 20 minutes, until asparagus is done to your liking.
