Ingredients
- 1 whole wheat English muffin
- 1/4 cup egg whites
- 1 small handful spinach
- 1-2 slices turkey bacon
- salt and pepper, to taste
- Shredded cheddar cheese
Instructions
- Toast the English muffin to your liking.
- While it's toasting, spray a small microwave-safe bowl with cooking spray. Add the egg whites and spinach and sprinkle with salt and pepper.
- Place the turkey bacon on a plate between layers of paper towels.
- Microwave the egg whites and bacon (together if they'll fit) for 1 minute and 30 seconds. Stir the egg whites and continue cooking in 30-second intervals until they're no longer runny.
- Sprinkle cheese on the toasted English muffin, top with the egg whites and turkey bacon. Serve!
