This Bacon Egg & Pineapple Turkey Burger is topped with turkey bacon, BBQ sauce, grilled pineapple and an Eggland’s Best Egg … grilled to perfection and served on top a bed of greens. It’s the perfect 4th of July dish!
Do fried eggs belong on a burger? It’s the debate plaguing burger lovers everywhere! And I’m definitely on team egg-topped burger. Actually, I’m team egg-topped everything. Which is why I’m thrilled to talk about Eggland’s Best Eggs today.
You’ve probably seen their pretty white box o’ eggs in the grocery store, and here’s why I love them. They stay fresher longer, have 25% less saturated fat, more than double the omega-3s, and more vitamins than regular eggs. Pretty neat, huh?
Eggs are one of my favorite sources of protein, especially Eggland’s Best. I eat eggs almost every morning to start my day with some protein, and I LOVE hard boiled eggs as a snack. (I eat them dipped in ketchup … don’t knock it ’till you try it). Plus, Eggland’s Best sells them in a pre-packaged pouch, already peeled, so they’re ready-to-go for those mornings you are in a rush! (find out where to buy them here)
This Bacon Egg & Pineapple Turkey Burger is the perfect dish for your 4th of July celebration. It’s a low-carb grilling recipe that’s sure to wow a crowd. I mean, look at it! It’s stacked with deliciousness.
With a juicy grilled turkey burger, crisp turkey bacon, grilled pineapple and greens instead of a bun, this is one burger creation you don’t have to feel bad about. The combination of tangy BBQ sauce, sweet pineapple and salty/savory turkey bacon is one for the record books. No joke.
I left the cheese out of this one, but feel free to add in any cheese you like! The ingredients for this recipe serve 1, but are easy to multiply to fit your number of guests.
Oh, and the best is when you sink your fork into that soft yolk of EB goodness (packed with more nutrition than ordinary eggs) and experience the most glorious of yolk runnage and imagine yourself in burger heaven for a second. Sigh. Life is good.
Happy 4th of July weekend, everyone! U-S-A!!
Ingredients
- 1 turkey burger patty (I buy mine frozen from Costco)
- 1 slice fresh pineapple
- 1 slice turkey bacon
- 1 Eggland's Best Egg
- BBQ sauce
- 1/2 cup greens (arugula, spinach, lettuce ... anything you like!)
Instructions
- Preheat your grill. Season the turkey burger to your liking. (I use a special burger blend, but salt and pepper works fine).
- In a small non-stick pan, fry turkey bacon until crisp. Remove and set aside.
- While the pan is still hot, turn heat to low and crack the egg on the pan. Cook for up to 5 minutes or until it's done to your liking.
- While the egg cooks, grill the pineapple and burger until it's not longer pink in the middle and the pineapple has some nice grill marks.
- Place burger over a bed of greens and top with BBQ sauce, bacon, pineapple, then the fried egg. ENJOY!
