And now can I get a HECK YEAH for these No-Bake Pumpkin Chocolate Chip Cookies?! Nothing beats a no-bake cookie recipe that includes everyone’s favorite fall ingredient. Even if temperatures are still high where you’re at, these don’t require the oven, so it’s perfectly acceptable to get fall started early.
When I saw this recipe on Chocolate Covered Katie, I knew I had to give it a try. I added chocolate chips because who can resist the combination of pumpkin and chocolate?
No-bake cookies have been my favorite dessert for years, and these No-Bake Pumpkin Chocolate Chip Cookies are the healthified fall version of them.
They don’t harden as much as typical no-bake cookies, because you don’t even have to cook these on the stove. Just mix the ingredients, refrigerate them to harden, and nom away!
It really couldn’t be much simpler. You can also roll these into bite-sized balls for a snack. Or, enjoy them as a delightful cinnamon-y, pumpkin-y dessert.

Ingredients
- 3/4 cup old fashioned or quick oats
- 1/2 cup oat flour (if you don't have oat flour, blend oats in a food processor until it resembles flour)
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 cup sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon pumpkin pie spice
- 1/4 - 1/2 cup chocolate chips
- 1/3 cup canned pumpkin
- 2 to 2 1/2 tablespoons milk of choice, as needed
- 1 tablespoon oil
- 1/2 teaspoon pure vanilla extract
Instructions
- Place all the dry ingredients in a bowl and stir to incorporate. In a separate bowl, mix together wet ingredients.
- Pour the dry into the wet and stir to combine. Form into balls or cookies and place on a parchment-lined baking sheet.
- Refrigerate to harden. Enjoy!
