No-Bake Pumpkin Chocolate Chip Cookies

These No-Bake Pumpkin Chocolate Chip Cookies take just a few minutes to make, and no baking required! It’s the perfect fall dessert recipe to make over and over.

No-Bake Pumpkin Chocolate Chip Cookies

Can I get a hip hip hooray for PUMPKIN SEASON?!

And now can I get a HECK YEAH for these No-Bake Pumpkin Chocolate Chip Cookies?! Nothing beats a no-bake cookie recipe that includes everyone’s favorite fall ingredient. Even if temperatures are still high where you’re at, these don’t require the oven, so it’s perfectly acceptable to get fall started early.

When I saw this recipe on Chocolate Covered Katie, I knew I had to give it a try. I added chocolate chips because who can resist the combination of pumpkin and chocolate?

No-bake cookies have been my favorite dessert for years, and these No-Bake Pumpkin Chocolate Chip Cookies are the healthified fall version of them.

They don’t harden as much as typical no-bake cookies, because you don’t even have to cook these on the stove. Just mix the ingredients, refrigerate them to harden, and nom away!

It really couldn’t be much simpler. You can also roll these into bite-sized balls for a snack. Or, enjoy them as a delightful cinnamon-y, pumpkin-y dessert.
