This might just be THE BEST Apple Cranberry Chicken Salad … ever. So many interesting flavors going on!
Have I told you about how my sisters and I are sort of obsessed with each other?
Well, maybe it’s not mutual. But I feel so lucky every day to have the most amazing siblings.
Let me illustrate it via an actual text conversation.
Jordan: Good things happened today so we’re celebrating tonight.
Sister: So I should put this $5 bottle of wine back and get something more expensive?
Teehehehe. No questions asked. She just gets me.
How do we celebrate you ask? Well, with a bottle of Santa Margherita and THE BEST Apple Cranberry Chicken Salad.
Every so often, my sister and I get together to meal prep. We share the groceries and the effort, and that way we don’t have to spend the next week and a half eating what we make! When you’re feeding one, full recipes tend to linger.
So, this week we tried out this healthy chicken salad recipe, and it did not disappoint. I always mix Greek yogurt with some mayonnaise because I think the yogurt alone is a bit bitter. And because I like to be bad sometimes.
Oh, and if you’re wondering why it’s just piled on a plate, it’s because that’s my preferred way to eat chicken salad. With a fork. Sometimes straight out of the food storage container.
With the sweetness of the apple chunks, plus the amazing flavor added by dried cranberries … Oh, and don’t forget your standard grapes and celery! Top it all off with slivered almonds for the perfect crunch and you’ve got yourself some of the best chicken salad … ever.
The dressing is a simple mixture of Greek yogurt, mayonnaise, lemon juice, S & P. Besides all the chopping this requires, it’s sssooo simple. It’s hard to mess this one up.
So please. Do yourself a favor and make a big old batch of THE BEST Apple Cranberry Chicken Salad. This recipe makes a lot a lot, so please cut it in half if you’re not feeding multiple people.

Ingredients
- 4 chicken breasts, cooked and shredded
- 1 apple, chopped
- 2 stalks celery, chopped
- 1 cup grapes, halved
- 1/2 cup dried cranberries
- 1/2 cup slivered almonds
- 1.5 cups Greek yogurt
- .5 to 1 cup lite mayonnaise (adjust as you go! you can always add more later)
- Juice of 1 lemon
- Salt and pepper, to taste
Instructions
- Throw the chicken, apple, celery, grapes, cranberries and almonds into a large bowl.
- In a separate bowl, mix together yogurt, mayo, lemon juice, salt and pepper. Add the dressing to the chicken salad and toss to combine.
- I like it best after refrigerating a few hours or overnight. Enjpy!
