Quinoa Stuffing Breakfast Bowls are a filling and healthy breakfast recipe for fall!
I am a firm believer that any food becomes a breakfast food if you put an egg on it.
Pizza, leftover steak/chicken/any meat, Thanksgiving stuffing … It’s all fair game if you slap a runny egg yolk on top.
These Quinoa Stuffing Breakfast Bowls are exhibit A.
Remember when I made Apple Sausage Quinoa Stuffed Acorn Squash? Well, that quinoa stuffing became the most delicious base for these breakfast bowls!
This tastes like Thanksgiving stuffing, but made with quinoa instead of bread. Savory sausage and sweet chunks of apple add incredibly flavor.
Then, add an over easy or sunny side up egg on top with runny yolk and you’ve got yourself one heck of a good breakfast.
So, don’t settle for any of those boring breakfasts. Instead, make these Quinoa Stuffing Breakfast Bowls. You won’t be sad you did.

Ingredients
- 1/2 pound sausage
- 1 stalk celery, chopped
- 1/2 onion, chopped
- 1 carrot, chopped
- 1 apple, chopped
- 1/2 teaspoon parsley
- 1/2 teaspoon sage
- Salt and pepper to taste
- 1 cup quinoa, cooked
- 1 egg
Instructions
- In a medium skillet, cook the sausage until browned. Transfer sausage with a slotted spoon to a bowl. Leave a bit of grease in the pan to saute the vegetables.
- Saute the onion, celery and carrot until soft. Add in the apple, parsley, sage, salt and pepper and continue cooking 2 minutes. Transfer onion mixture to the bowl with the sausage. Stir in quinoa.
- Divide the quinoa mixture into 4 bowls. Top each with a fried or sunny side up egg. Enjoy!
