Chocolate Peanut Butter Chia Pudding

Is there any better combination than peanut butter and chocolate? Or peanut butter and anything, for that matter? Nope … I didn’t think so either.

This Overnight Peanut Butter and Chocolate Chia Seed Pudding recipe is a lightened up dessert that’s reminiscent of a peanut butter cup!

I absolutely love chia seed pudding because it’s so stinkin’ easy to make, and I don’t feel bad about eating it for dessert, snacks or even breakfast!

Chocolate Peanut Butter Chia Pudding

You just need a few simple ingredients to make this pudding (most of which you probably already have on hand), and it comes together in minutes!

Overnight Peanut Butter and Chocolate Chia Seed Pudding is the perfect cure to that nagging sweet tooth. The consistency is thick (like pudding), with a bit more texture from the chia seeds.

Chocolate Peanut Butter Chia Pudding

If you’ve never tried chia seed pudding … don’t be scared! The chi seeds turn soft and gelatinous overnight, so it really does taste like pudding. Oh, and the fact that you add peanut butter and chocolate definitely doesn’t hurt. 😉

Ingredients

  • 1/3 cup chia seeds
  • 1/4 cup cocoa powder
  • 1/4 cup almond butter or peanut butter
  • 1 1/2 cup unsweetened almond, coconut or dairy milk
  • Dash of vanilla extract
  • 2 tablespoons honey or maple syrup

Instructions

  1. Place all ingredients in a mason jar or food storage container and stir well. Cover and refrigerate overnight or for at least 3 hours. Enjoy!

    I highly recommend you heat this up a little in the microwave and drizzle a bit of peanut butter and/or honey over the top. It is outrageously good heated up a little.

    A certain PB Cup had it right when they said "Two Great Tastes that Taste Great Together!" when referring to PB & Chocolate. What makes the recipe even better is when you realize how healthy it is with fiber & protein, especially if plant milk is used. But what if you wanted it for breakfast? It's possible to make a 'no sweetener added' version if you puree in a banana with your plant milk, vanilla and the cocoa then use that to soak the chia seeds. .
