Asiago Chicken Cauliflower Gnocchi with Sun Dried Tomatoes and Spinach

Ingredients
1 bag Trader Joe's frozen cauliflower gnocchi
1 tablespoon olive oil
1 tablespoon garlic
1 cup chicken stock
1/2 cup milk (2% or half and half)
1/2 cup sun dried tomatoes, chopped
Salt and pepper, to taste
2 cups chicken, cooked and shredded
2 cups spinach
1/2-1 cup asiago cheese, shredded (use as much as you want depending on how strong you want the flavor)
1 tablespoon arrowroot powder
Instructions
Thaw cauliflower gnocchi in the microwave.
Heat olive oil in a large skillet. Add gnocchi in a single layer and cook until crispy brown on both sides.
Once cooked, add garlic to the pan and let cook about 1 minute. Add chicken stock, milk, sun dried tomatoes, salt and pepper and stir carefully until cheese is melted. Let the mixture simmer for about 5 minutes.
Add chicken, spinach and asiago cheese and stir until spinach wilts and cheese is melted.
Mix arrowroot powder with 3 tablespoons cold water. Add to the pan and stir until the sauce thickens. Serve right away.
