Spicy Shrimp Stir Fry Noodle Bowls

Spicy Shrimp Peanut Noodle Bowls make the perfect meal prep or dinner recipe with shrimp, noodles, peanut sauce, and kimchi.

Ingredients

For the stir fry

  • 8 ounces brown rice noodles
  • 1 Tablespoon sesame oil
  • 1 cup carrots, cut into matchsticks or shredded
  • 1 red bell pepper, sliced
  • 1 cup broccoli, chopped
  • 1.5 Tablespoons fresh ginger, peeled and chopped
  • 1 Tablespoon garlic, chopped
  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup green onions, chopped
  • 1/2 cup cilantro
  • Chopped peanuts, for garnish

For the sauce

  • 1/2 cup creamy peanut butter
  • 1/4 cup warm water
  • 3 Tablespoons soy sauce
  • 2 Tablespoons honey
  • 2 Tablespoons sriracha
  • 2 Tablespoon lime juice
  • 1 Tablespoon sesame oil
  • 1 cup kimchi
  • 2 cups greens (I used arugula and microgreens)

Instructions

  1. Cook noodles according to package directions. Drain and set aside.
  2. Meanwhile, mix all sauce ingredients together and set aside.
  3. In a large wok or pan, add sesame oil, carrots, pepper, broccoli, garlic and ginger. Cook until carrots are tender.
  4. When the vegetables are almost cooked through, add shrimp to the pan and cook about 1 minute per site, just until pink.
  5. Add sauce and noodles to the pan and mix to combine. Stir in green onion and cilantro. Top with chopped peanuts.
  6. To assemble bowls, divide greens, kimchi and noodles amongst 5 bowls. Enjoy!

Notes

If you don't want it spicy, omit the sriracha.
