Ingredients
1/2 cup almond butter
1/2 cup sweet potato, raw, minced in a food processor
1 large egg
1/3 cup cocoa powder
1/3 cup maple syrup
2 tablespoons coconut oil
1 tablespoon vanilla extract
1 tablespoon gelatin
1/2 teaspoon baking soda
1/3 cup mini chocolate chips
Instructions
Preheat oven to 325 degrees F. Grease a mini muffin pan.
Blend all ingredients except chocolate chips in a food processor until smooth.
Pour batter into the mini muffin tin until each cup is almost full. Sprinkle the tops with more mini chocolate chips.
Bake for about 20 minutes or until a knife inserted into the center of the brownies comes out clean.
Let cool before removing from the muffin tin.
Notes
You can also use a 6-inch baking dish. Increase cooking time to 25 minutes.
