4-Ingredient Air Fryer Cauliflower Gnocchi with Sausage and Brussels Sprouts
A quick and easy dinner recipe that only requires 4 main ingredients!
Ingredients
1 pound brussels sprouts, trimmed and halved or quartered
1 tablespoon olive oil
Salt and pepper, to taste
1 bag Trader Joe’s cauliflower gnocchi
Avocado oil spray
4 chicken sausage links, sliced
1/4 cup pesto
Parmesan cheese, grated, for topping (optional)
Instructions
In a medium bowl, toss brussels sprouts with olive oil, salt and pepper. Preheat air fryer to 380 degrees. Place brussels sprouts in the basket and cook for 20 minutes, shaking the basket every 5 minutes, until brown and crispy. Remove and set aside.
Change the air fryer temperature to 400 degrees. Spray the basket with avocado oil spray. Arrange cauliflower gnocchi in a single layer and spray them with avocado oil spray. Cook for 10-12 minutes or until golden brown. Shake the basket halfway through cooking and spray with more oil to cook evenly.
While the air fryer cooks, cook the chicken sausage in a medium stock pot until golden brown. Turn off the heat and add the cooked brussels sprouts, cauliflower gnocchi and pesto and toss to combine. Serve hot sprinkled with Parmesan cheese.
Notes
You can also cook the brussels sprouts in the stock pot after you cook the chicken sausage if you want them less crispy brown.
