Ingredients

8 cups greens of your choice (chopped romaine or baby spinach are what I use most often)

4 ounces salami, diced

8 ounces mozzarella balls, halved

1 red pepper, diced

1 cup artichoke hearts, quartered

1 cup cherry tomatoes, halved

1/2 cup pepperoncini, chopped

1/2 cup green or black olives, sliced

1/4 cup red onion, diced

8 basil leaves, cut into ribbons

Homemade Balsamic Dressing

3/4 cup extra virgin olive oil
-
1/4 cup balsamic vinegar
-
1 tablespoon honey
-
1 tablespoon dijon mustard

Salt and pepper, to taste

1 garlic clove, minced
Instructions
- Combine all salad ingredients in a large bowl.
- In a small mason jar or food storage container, add all dressing ingredients. Close the container and shake to mix! (Or use a bowl with a whisk).
- Pour dressing on salad (to taste, you might not need it all), and toss to coat. Serve immediately.
