Skinny Crockpot Chicken Chili is a super easy chili recipe that's made healthier with chicken. Just dump all ingredients in a slow cooker and let it cook!
Ingredients
2 cloves garlic, minced
1/2 cup sweet onion, diced
1 cup zucchini, diced (optional)
1 cup fresh or frozen corn kernels
1.5 pounds (2-3) chicken breasts, cut into bite size pieces
1 (14.5 ounce) can fire roasted tomatoes with liquid
1 (6 ounce) can tomato paste
1 1/2 cups chicken broth
2 tablespoons chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 teaspoon black pepper
Kosher salt, to taste
1 (15.5 ounce) can black beans
ΒΌ cup reduced fat cheddar cheese for garnish
Instructions
Combine all ingredients except cheese in a slow cooker. Cook on LOW for 6-8 hours or HIGH for 3-4 Hours.
