Instant Pot Italian Beef

This recipe for Instant Pot Italian Beef is one of the easiest ways to make it, but turns out SO delicious every time.

Ingredients

  • 1 (3 pound) chuck roast
  • 1 teaspoon garlic powder
  • 1 teaspoon dried minced onions
  • 1 tablespoon Italian seasoning mix
  • Salt and pepper, to taste (I use about 1 teaspoon each)
  • 2 Tablespoons olive oil
  • 1 Cup low sodium beef broth
  • 1 Cup sliced pepperoncini peppers with juice
  • Hard rolls
  • Provolone cheese, sliced or shredded
  • Giardiniera

Instructions

  1. Cut the chuck roast into 6 pieces.
  2. Mix the garlic powder, minced onions, Italian seasoning mix, salt and pepper together in a small bowl. Season the beef really well on all sides.
  3. Turn your Instant Pot on saute mode. Add the olive oil then add the beef in a single layer (work in batches so they don't overlap). Cook the beef for about 2-3 minutes per side until nice and brown on all sides.
  4. Add beef broth to the Instant Pot along with the browned beef. Use a wooden spoon to scrape up all the brown bits from the bottom of the pot. Add in the pepperoncini.
  5. Place the lid on the Instant Pot, turn the vent to Seal, and cook on High Pressure for 50 minutes. Allow it to natural release for 10 minutes. Shred the beef and return it to the liquid.
  6. Preheat oven to 350 degrees F. Spoon the Italian beef onto a roll, top with provolone cheese, then top with giardiniera. Bake sandwiches on a baking sheet until the cheese melts. Spoon some of the cooking liquid on top of each sandwich before serving.
