Korean Ground Turkey Bowl

These Korean Inspired Ground Turkey Bowls are packed full of flavor and perfect for meal prep.

Ingredients

Korean Ground Turkey

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1/4 teaspoon fresh ground ginger
  • 3 cloves garlic, minced
  • 1/4 cup brown sugar or coconut palm sugar
  • 1/4 cup low sodium soy sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon crushed red pepper flakes, or more if you like it spicy
  • salt and pepper, to taste

Cucumber Salad

  • 1 cucumber, sliced thin
  • 1 red onion, sliced thin
  • 1/4 cup of rice wine vinegar
  • 1 teaspoon of honey
  • 1/2 teaspoon toasted sesame oil
  • 1 teaspoon of Everything But the Bagel Seasoning

Yum Yum Sauce

  • 1 cup mayonnaise
  • 1 Tablespoon butter, melted
  • 1/4 cup ketchup
  • 1 teaspoon honey
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • pinch of cayenne pepper
  • Water to thin (optional)

Bowls

  • Brown rice (or any grain)
  • Shredded cabbage slaw mix (sold in the bags greens section)
  • Kimchi

Instructions

  1. For the turkey: add the olive oil to a pan and brown the ground turkey until completely cooked. Add the garlic and ginger and cook for about 1 minute. In a small bowl combine brown sugar, soy sauce, sesame oil, crushed red pepper, salt and pepper. Add to the pan, stir to combine, and cook for 3-5 minutes more.
  2. For the cucumber salad: mix all ingredients together and store extras in an air tight container.
  3. For the Yum Yum sauce: mix all ingredients together. Add water by the Tablespoon to thin out the sauce if needed.
  4. For the bowls: add 1/2 cup of brown rice to a bowl and top with cabbage slaw mix. Add 1/2 of the ground turkey, some cucumber salad, and some kimchi. Top with Yum Yum sauce and enjoy!

Notes

If meal prepping these bowls, store the cucumber salad and kimchi separately from the rice, turkey and cabbage mix (to make it easier to microwave). Use something like the bento box below!
