Chicken Burrito Bowl Meal Prep Recipe

This chicken meal prep recipe for a chicken burrito bowl is super easy to assemble for lunches!

Ingredients

  • 2 chicken breasts, cooked
  • 2 cups brown rice, cooked
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 avocado, sliced
  • cherry tomatoes, halved
  • 1 red pepper, sliced
  • Cilantro, for garnish

Instructions

  1. Cut the chicken breast into slices or cubes. Divide all ingredients amongst 4 meal prep bowls.
  1. Microwave 2 minutes to serve (I recommend packing the tomatoes and avocados separately).
