Ingredients

2 chicken breasts, cooked

2 cups brown rice, cooked

1 cup black beans, drained and rinsed

1 cup corn, drained

1 avocado, sliced

cherry tomatoes, halved

1 red pepper, sliced

Cilantro, for garnish
Instructions
- Cut the chicken breast into slices or cubes. Divide all ingredients amongst 4 meal prep bowls.
- Microwave 2 minutes to serve (I recommend packing the tomatoes and avocados separately).
