Cheesy Beefy Freezer Burritos: Perfect for Meal Prep
These Cheesy Beefy Freezer Burritos are super easy to make and are the perfect thing to make ahead of time. Keep these on hand in your freezer for a quick and easy lunch or dinner.

Ingredients
1 tablespoon oil
1 pound lean ground beef (or ground turkey)
1/2 white or yellow onion, diced
1 packet taco seasoning
1/2 cup plain Greek yogurt (or sour cream)
1/2 cup enchilada sauce (I like Siete brand)
1/2 cup shredded cheddar cheese
2 Laughing Cow cheese wedges (optional, you can also use cream cheese)
Chopped cilantro, to taste
6 burrito shells
Instructions
Heat oil in a pan and cool ground beef and onion until the meat is no longer pink and onion is cooked.
Add in taco seasoning, Greek yogurt, enchilada sauce, cheddar cheese and Laughing Cow cheese and stir until combined and creamy. If it doesn't look creamy enough, you can add more of any of these ingredients. Stir in cilantro.
Fill each burrito shell with the meat mixture and roll.
Roll each burrito in tin foil and freeze.
To reheat, thaw in the refrigerator overnight or microwave for 2 minutes.
Bake at 400 degrees F for about 10 minutes, fry in a pan for about 2 minutes per side, or air fry for about 6 minutes. Enjoy!
