These 10 Easy, Healthy Meals For One are either intentionally portioned to feed one person, or recipes that make great leftovers so you can pack extras for lunches throughout the week!
Life is hard. Making dinner is hard. Everyone is busy. I GET IT.
If you follow me on Instagram, you probably know that I’m a big big fan of quick and easy weeknight meals for one.
Especially because I’m usually cooking for just myself, I love experimenting with meals that require less than 30 minutes and as few ingredients as possible.
All the recipes below are ones I make pretty much on repeat. Since I’m constantly sharing them on Instagram only, I’ve received tons of requests for recipes. And here they are, all in one place!
My undying love of Trader Joes makes its way into most of these recipes, but many items can be substituted with items found at your grocery store.
I’m always willing to spend a little bit more money on time-saving items like prepared fresh veggies (pre-washed and cut in the produce section), frozen cauliflower rice, frozen mashed sweet potatoes, frozen cauliflower crust pizza, frozen stir fry mixes, pre-cooked pot roast, etc etc.
If you’re looking to decrease your spend on take out this year and try cooking at home more, I really hope you find these easy and healthy meals for one recipes helpful!
These weeknight meals for one are great because they don’t require any prep at all. Many of them make leftovers that are great to take for lunches all week
Instant Pot Chicken and Bruschetta Spaghetti Squash
Ingredients:
- 2 chicken breasts
- Italian seasoning
- ¼ cup chicken stock or water
- Spaghetti squash, cooked
- Trader Joes bruschetta topping (the version in the refrigerator section)
Instructions:
- Season chicken with Italian seasoning and place in the Instant Pot with chicken broth or water. Make sure vent is turned to seal, cook on poultry setting for 10 minutes. Quick release and shred chicken.
- Toss spaghetti squash with chicken and bruschetta topping.
Sheet Pan Meals
The method for these is SO easy. I just place my protein and vegetables together on one pan. Any protein works – mix it up!
My favorites are chicken breast, pork chops, pork tenderloin and chicken sausage because they require a similar cooking time as the vegetables.
My trick for vegetables is to try to choose vegetables with similar cooking times. For example, zucchini cooks more quickly than brussels sprouts, so I would cook those on separate pans.
If you’re cooking harder vegetables like squash or potatoes, cut them in very small pieces so they cook in a similar time as other vegetables like brussels sprouts, carrots or broccoli.
Chicken Burrito Bowls
Ingredients:
- 1 package Trader Joes adobo chicken
- 1 package fresh stir fry mix (or any vegetables you want)
- 1 tablespoon taco seasoning
- 1 can black beans, drained and rinsed
- 1 can corn, drained and rinsed
- 2 cups brown rice, cooked (I buy Trader Joes in the frozen section)
Instructions:
- Heat a cast iron skillet. Add olive oil and cook chicken until cooked through. Remove and set aside.
- Add vegetables to the pan with about ¼ cup water and taco seasoning. Cook until vegetables are al dente.
- Cut chicken into cubes.
- To assemble bowls, top rice with chicken, vegetables, beans and corn. Garnish with cilantro and lime.
Chicken and Sweet Potato Bowls
Ingredients
- 1 package frozen cauliflower rice (I buy mine at Trader Joes)
- 1 clove garlic, minced
- ¼ cup shredded Parmesan
- 1 package frozen mashed sweet potato (I buy mine at Trader Joes)
- 1 pound pre-marinated chicken
Instructions:
- Heat 1 tablespoon olive oil in a large skillet. Add chicken and cook on both sides until cooked through. Remove and set aside.
- Add cauliflower rice to the pan with more olive oil, garlic, salt and pepper. Cook until soft. Stir in Parmesan.
- Microwave mashed sweet potatoes according to package directions.
- Serve chicken on cauliflower rice with sweet potatoes.
Costco Pot Roast and Veggies
Costco sells microwavable pot roast with gravy that’s actually SO good! I freeze mine and bust it out during busy weeks. They also sell shredded pulled pork that’s Whole 30 compliant!
Serve with any vegetables and starches/grains you want.
Trader Joes Gluten-Free Cheese Pizza
I’ve recently become obsessed with Trader Joes cauliflower pizza. Buy the one already with cheese in the frozen section, not the one that’s just the crust!
I love this pizza because it’s so easy to add my own toppings and serve alongside a huge green salad.
My favorite pizza topping combinations:
- Prosciutto, fresh tomatoes, garlic and arugula
- Pineapple and Canadian bacon
- Turkey pepperoni and green olives
Trader Joes Cauliflower Gnocchi
This stuff is the bidness.
Don’t cook it according to packaging directions! Thaw the gnocchi in the microwave first. Then, cook it in a pan with coconut oil or avocado oil on both sides until brown and crispy.
Here I have it topped with Trader Joes vegan pesto served with broccolini and roasted mushrooms.
Pizza Salad
One of my favorite salad combinations is reminiscent of my favorite food: PIZZA. It’s spinach, green pepper, red pepper, mushrooms, red onion and pepperoni.
Dress with Italian seasoning and olive oil. Mix up the toppings to match your favorite pizza toppings!
Trader Joes Ground Turkey Cauliflower Stir Fry
One of my favorites! Trader Joes cauliflower stir fry is a pre-seasoned mix that makes a great weeknight staple.
Cook ground turkey until cooked through. Remove and set aside. In the same pan, cook cauliflower stir fry.
Mix the turkey back in, add more soy sauce and sriracha to taste. Top with a fried egg if you’re feeling fancy.
Banza Pasta with Vegetables
If you follow me on Instagram you know I’m completely obsessed with any combination of Banza pasta and Rao’s Homemade pasta sauce.
For super quick weeknight meals, I sauté a bag of stir fry vegetables and serve them mixed with the pasta and sauce.
