When life hands you extra egg roll wrappers, an abundance of end-of-summer produce, and 20 minutes to spare, beautiful things happen. I had some left over egg roll wrappers from my Healthier Apple Hand Pies and it would be a sin to let those go to waste! These Cheesy Zucchini and Corn Baked Egg Rolls are a great summer treat to clean out the fridge.
Growing up near my grandpa’s farm, I always looked forward to sweet corn season. My sister would always try to be fancy and cut her corn off the cob – not sure if it was to be glamorous or just because she didn’t want corn in her braces. Either way, too much work. I dove in face first and came out with two cheeks full of butter.
After the big harvest this season, I was lucky enough to escape with a few ears from Grandpa’s field to bring back to the city. I immediately boiled a few to eat for dinner (2 ears of corn with salt and pepper = dinner on Sunday when I’m lazy). The rest of it, I shucked and cut the corn off the cob using a bundt pan. THAT TRICK REALLY WORKS! Just stick the ear right in the hole of the bundt and the corn will fall into the pan. Magic.
Anyhoot, now I have all this frozen corn and endless possibilities of what to make with it. Enter: Cheesy Zucchini and Corn Baked Egg Rolls. I was kickin’ myself for not thinking to add chicken to these, which would be awesome. If you’re not a big meat eater though, these are the perfect summery appetizer or snack. Italian seasonings and gooey Parmesan cheese add great flavor to these egg rolls, and their baked instead of fried to make them a little lighter.
Dunk these rolls of deliciousness in some pizza or marinara sauce and you’ve got yourself a darn good treat. The sweetness of the corn, mixed with savory spices and gooey cheese make these thin and crispy egg rolls a perfect flavor and texture combination. Notice in this photo that all the egg rolls are missing from the plate ……. someone must have eaten them all during my photo shoot while I wasn’t looking!
