You have to make lasagna.

And if you’re me, you can’t just throw some noodles together with cheese and canned sauce. You have to make your own homemade meat sauce, try some weird combination of cottage cheese, plus buy special tri-colored lasagna noodles from Eataly to attempt to make the best lasagna ever. Let me tell ya, lasagna is one exhausting casserole to make.

That’s why I used the leftover ingredients to make these EASIER and healthier Lightened Up Spinach Lasagna Rolls with Meat Sauce. I love these because they’re already portioned out, so there’s no struggling with cutting and scooping out pieces. Plus, I even think these tasted better than lasagna in layered form.

For this lightened up spinach lasagna rolls and meat sauce, is this with a cooked egg or raw? I know some people us raw eggs to keep the ingredients together and i usually add a cooked egg in lasagna but I wasn't sure so thought I'd ask

Hi Madeeha! I use a raw egg in the ricotta mixture to keep everything together and prevent it from running. You can follow the same strategy that you typically use in regular lasagna.

Made these simple lasagna rolls today to finish up some ricotta. Delicious! So excited to have found a recipe to satisfy my lasagna craving without having to make a full lasagna.
