I recommend using a cast iron skillet to make any meat – especially chicken and salmon. I’m always able to get a better golden sear on the outside of meat with cast iron without overcooking it.

Quick French Onion Chicken
Juicy chicken breasts covered in a caramelized onion sauce and melted cheese
Ingredients
- 2 boneless skinless chicken breasts
- Salt and pepper, to taste
- 1 teaspoon coconut oil
- 1/4 cup caramelized onions
- 2 cloves garlic, minced
- 3 stems of thyme, chopped (about 1/2 tsp)
- 1 tablespoon balsamic vinegar
- 1/2 cup Swiss cheese, freshly shredded
Instructions
- Season chicken breasts liberally on both sides. Heat oil in a cast iron pan and cook chicken until cooked through and brown on both sides, about 3-4 minutes per side. Remove and set aside.
- In the same pan, add garlic and thyme and saute one minute. Add caramelized onions and balsamic vinegar to the pan. Stir to combine. Add in a few tablespoons of water or beef broth if the mixture seems too dry.
- Return chicken back to the pan and top with the onion mixture. Top each chicken breast with cheese, cover, and cook until cheese is melted. (You can also place the pan under your oven's broiler for a few minutes to brown the cheese).
- Serve and enjoy!
