Although my family’s menu is pretty much the same every year, I love to add something one new dish to the menu to mix things up.
These Air Fryer Miso Brussels Sprouts with Pancetta are inspired by Pat and I’s obsession with ordering brussels sprouts wherever we go. We’ve probably tasted 20 different restaurants’ brussels just in the past two years.
They’re always super crispy, made with pancetta or prosciutto or bacon, and they’re always SO flavorful.
I made it my mission to try to emulate that deliciousness at home, and I think I’ve figured it out!
First of all, you’ve gotta air fry brussels sprouts. Sure, you can make them in a cast iron pan and get a similar result, but the air fryer truly gets these the crispiest ever.
Plus using an air fryer means you’ll free up valuable stove and oven space on Thanksgiving! Win, win.
Secondly, this miso maple glaze is EVERYTHING. It’s truly so simple to make, but just give it one taste and you’ll know what I mean.
The measurements included are what I’ve found to be perfect, but the key is to taste your glaze and adjust until it’s equal parts sweet, salty and acidic. Once you get it perfect, you’ll want to drizzle this glaze on EVERYTHING.
Once the brussels and pancetta are nice and crispy, just toss in the glaze and serve right away.

Air Fryer Miso Brussels Sprouts with Pancetta
These Air Fryer Miso Brussels Sprouts with Pancetta are air fried until super crispy then covered in the best miso glaze ever.
Ingredients
- 5 cups brussels sprouts, stems removed and halved
- 2 ounces diced Pancetta
- 2 teaspoons olive oil
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 Tablespoon white miso
- 1 Tablespoon maple syrup
- 2 Tablespoons rice vinegar
- Pinch of sea salt
Instructions
- Toss brussels sprouts, pancetta, olive oil, salt and pepper in a large bowl until brussels sprouts are coated.
- Place them in the air fryer basket and cook on 350 degrees for 10-15 minutes or until really crispy. Shake the basked every 5 minutes.
- While the sprouts cook, mix miso, maple syrup, vinegar and sat together. Taste it and adjust if necessary.
- Toss the sprouts in the miso glaze and serve immediately.
