I personally love January because it always feels like a fresh start. It’s the perfect time of year to get back on track with meal prepping, workouts, hydration, and all the healthy habits that are sometimes lost during the holidays.
These Korean Inspired Ground Turkey Bowls are the perfect way to kick start your goals for 2022! Although these bowls are healthy, they’re definitely not lacking in flavor.
These bowls start with a base of brown rice and shredded cabbage, then topped with Korean ground turkey that’s slightly sweet and delicious. The cucumber salad adds an amazing tangy crunch, and the kimchi adds just a bit of heat. Top it all off with some creamy Yum Yum Sauce and you’ve got yourself the perfect meal!
How to Make Korean Inspired Ground Turkey Bowls
- Make the Ground Turkey – this is the same recipe as my popular ground beef bowls, but using turkey instead! If you’re trying to limit sugar intake, you can cut the sugar in half and it will still taste good.
- Make the Cucumber Salad – even if you don’t make the full bowls, you should make this cucumber salad! It’s one of my favorite recipes to snack on throughout the week.
- Make the Yum Yum Sauce – I first made this sauce for my Korean Beef Bowls and knew I needed to make it over and over again.
- Assemble the Bowls – customize however you like: use any grain, add vegetables, etc.

Korean Inspired Ground Turkey Bowls
These Korean Inspired Ground Turkey Bowls are packed full of flavor and perfect for meal prep.
Ingredients
Korean Ground Turkey
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1/4 teaspoon fresh ground ginger
- 3 cloves garlic, minced
- 1/4 cup brown sugar or coconut palm sugar
- 1/4 cup low sodium soy sauce
- 1 tablespoon sesame oil
- 1/2 teaspoon crushed red pepper flakes, or more if you like it spicy
- salt and pepper, to taste
Cucumber Salad
- 1 cucumber, sliced thin
- 1 red onion, sliced thin
- 1/4 cup of rice wine vinegar
- 1 teaspoon of honey
- 1/2 teaspoon toasted sesame oil
- 1 teaspoon of Everything But the Bagel Seasoning
Yum Yum Sauce
- 1 cup mayonnaise
- 1 Tablespoon butter, melted
- 1/4 cup ketchup
- 1 teaspoon honey
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- pinch of cayenne pepper
- Water to thin (optional)
Bowls
- Brown rice (or any grain)
- Shredded cabbage slaw mix (sold in the bags greens section)
- Kimchi
Instructions
- For the turkey: add the olive oil to a pan and brown the ground turkey until completely cooked. Add the garlic and ginger and cook for about 1 minute. In a small bowl combine brown sugar, soy sauce, sesame oil, crushed red pepper, salt and pepper. Add to the pan, stir to combine, and cook for 3-5 minutes more.
- For the cucumber salad: mix all ingredients together and store extras in an air tight container.
- For the Yum Yum sauce: mix all ingredients together. Add water by the Tablespoon to thin out the sauce if needed.
- For the bowls: add 1/2 cup of brown rice to a bowl and top with cabbage slaw mix. Add 1/2 of the ground turkey, some cucumber salad, and some kimchi. Top with Yum Yum sauce and enjoy!
Notes
If meal prepping these bowls, store the cucumber salad and kimchi separately from the rice, turkey and cabbage mix (to make it easier to microwave). Use something like the bento box below!
