Mango Salsa Chicken Meal Prep Bowls is an easy meal prep recipe with chicken, rice and mango avocado salsa.
Of all the meal prep recipes I’ve created, I think this is one of my all-time favorites.
There’s just something about the combination of juicy grilled chicken with mango avocado salsa that’s so summery and delicious and unexpected and amazing.
I seriously could not stop eating these Mango Salsa Chicken Meal Prep Bowls. I wish I had more than four!
Let’s talk about the chicken. Please for the love of all that is holy, marinate your chicken. It takes a little bit of planning, but it really makes a world of difference in the end result. Plain chicken is blech, amiright?
Secondly, I’ve recently discovered the beauty of a cast iron grill pan and I seriously feel like I’ve been living my life all wrong up until this very point.
Cast iron seriously makes a world of difference in cooking chicken, salmon and steak. A WORLD OF DIFFERENCE. Everything cooks more evenly and gets a nice crispy golden crust (also known as FLAVOR CITY).
The last component that makes these bowls extra special is the cilantro lime rice. If you’ve ever been to Chipotle, you know why this stuff is rice on steroids.
To make these Mango Salsa Chicken Meal Prep Bowls, you can use brown rice, quinoa, cauliflower rice, or Banza rice (what I used … it’s made from chickpeas and tastes like orzo!).
So, when you combine the three most beautiful things (juicy chicken, mango salsa and cilantro lime rice) … obviously it makes for a flavor explosion in your mouth. I feel like you’re going to want to marry me after you try it.
But let’s talk about how you get these beauties from A to B.
If you didn’t notice, I pretty much had the most beautiful, colorful meal prep situation going on. I use these meal prep containers because they have a colorful silicone sleeve for protection, a totally leak-proof clear lid to see inside, and they’re just really stinkin’ cute.
I also recently bought these silicone muffin liners which are so cute and perfect to hold the salsa. It acts as a cup so you can remove the salsa for microwaving. (They’re also great for portion controlling your snacks). Just make sure you keep the containers right side up since these cups will spill out if they tip over.

Mango Salsa Chicken Meal Prep Bowls
Mango Salsa Chicken Meal Prep Bowls is a healthy meal prep recipe with chicken, cilantro lime rice and mango avocado salsa
Ingredients
Chicken Marinade
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar, soy sauce or coconut aminos
- 1 Tablespoon fresh lime juice
- 1 1/2 Tablespoon Dijon mustard
- 2 teaspoons minced garlic
- 2 Tablespoons fresh cilantro, chopped
- Salt and pepper, to taste
- 8 chicken tenderloins
Mango Salsa
- 2 mangoes, diced
- 1 avocado, diced
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1 bunch cilantro, chopped (reserve 2 Tablespoons for rice)
- 1/4 teaspoon salt
- Juice of 1 lime
Cilantro Lime Rice
- 2 cups cooked rice, quinoa, cauliflower rice, or Banza rice (I used Banza)
- 1 lime, sliced
- 2 Tablespoons fresh cilantro, chopped
- Salt and pepper, to taste
Instructions
- Place all marinade ingredients in a large ziploc bag and shake to combine. Place chicken in the bag, close, and refrigerate at least 30 minutes or up to overnight.
- To cook the chicken, grill on medium-high heat for 6 minutes per side or cook in a preheated cast iron pan for 5 minutes per side or until no longer pink.
- Mix mango salsa ingredients together in a large bowl.
- In a separate bowl, combine rice, lime juice, cilantro, salt and pepper.
- To assemble meal prep bowls, divide rice amongst four leak-proof glass food storage jars. Top each with two chicken tenderloins (you can slice at this point or slice when you're ready to eat).
- Divide mango salsa amongst all four bowls using silicone muffin cups (I did this to prevent sogginess and make it easier to microwave). Garnish with a lime wedge.
- Close storage containers and refrigerate up to 4 days. To eat, remove mango salsa and lime from the bowl and microwave chicken and rice for 2 minutes. Pour mango salsa in the bowl, squeeze with lime, and mix to combine. Enjoy!
Notes
The avocado might get a little brown in the salsa after about a day. If that bothers you, add the avocado separately right before eating!

There’s avocados in the photos and description but you didn’t list avocados in the salsa ingredients. :)
