Overnight oats and I go way back. All the way back to college. I opened the fridge one day and saw a mason jar, much like this one, filled with a strange goopy substance and I immediately set out to investigate. When my roommate tried to explain to me that refrigerating oats until they are soft, then eating them cold, was a thing … I looked at her like she had completely gone off the vegetarian deep end. Just when I thought it couldn’t get any more weird than falafel. 

Well, I’m happy to say I’ve opened my mind to all sorts of food since then, and overnight oats really are all they’re cracked up to be. For many people, the thought of cold oatmeal is totally weird, but I urge you to try a spoonful. If ya don’t dig it, warm them up. But I’m thinking you might be surprised.

Overnight oats are great because you can put pretty much anything in them depending on what you like. I love experimenting with different fruits, nuts, and additional add-ins.

This Apple Pie Overnight Oats recipe is perfect for fall because it can be made ahead of time for those busy mornings when you’re running out the door. Store them in a mason jar for quick breakfasts all week!

Note: I used quick oats when I made this batch, but I much prefer old-fashioned oats.

A must try for me. I love oatmeal anything. We will have to do this over the holidays when you cook for me. Great Job. Ya gotta love the roomies that help you to open your mind to new foods.
