This Turkey Spinach Artichoke Panini has all the flavors of the delicious dip, in an easy-to-make panini recipe. This is a great healthy lunch idea that’s so much better than a boring turkey sandwich.
Well, my blog is called Smile Sandwich and I think this is the first sandwich I’ve ever posted. To be honest, I’m not a huge sandwich person. I was one of those children who would eat everything in my lunch and come home with my sandwich still in its bag. Unless I drank too much the night before, sandwiches still don’t really do it for me …
PANINIS though!? Oh man, do I love a good panini. I fell in love with paninis in college – they’re all I ate when I realized I had gained the freshman 20. (Yes, paninis were my idea of the healthiest food I could stomach).
You can literally take an average sandwich, heat it up in a panini press, and PRESTO: that sandwich just became a gooey, warm, delicious meal from heaven.
I made this Turkey Spinach Artichoke Panini at my mom’s house with her panini maker, and I remembered why I lived off them freshman year. It has all the flavors of spinach artichoke dip, in a protein-packed panini.
I love fresh sourdough bread from the bakery, but you can use any bread you want! Fiber-filled whole wheat will keep you going all day long. This is the perfect quick lunch idea for anytime you want to be bad without feeling guilty.
I put rough ingredient measurement estimates, because this recipe is meant for one person – and who’s gonna measure out their sandwich ingredients? More likely – you’re gonna grab some turkey out of the deli bag, throw a few slices of cheese in the mix, and conserve your brain energy for something more important than counting slices. So, measurements are there, but feel free to freestyle this sammich.
Ingredients
- 2 tablespoons marinated artichoke hearts, chopped
- 1 tablespoon ranch dressing or low fat cream cheese
- 1/4 cup spinach, washed and chopped
- 2 slices sourdough bread
- 2 ounces organic roasted turkey breast
- 1 slice provolone cheese
Instructions
- Preheat panini maker.
- In a small bowl, mix chopped artichoke hearts, dressing or cream cheese, and spinach.
- Spread the mixture on both pieces of bread, then layer on slices of turkey and cheese. Close the sandwich.
- Spray the panini maker with cooking spray and cook 3-5 minutes until bread is toasted and cheese is melted.
- To cook on a skillet, butter the outside of both pieces of bread before assembling the sandwich. Preheat a skillet and cook 2-3 minutes on each side.
