I’ve discovered the magic of caramelized onions. Well … actually I’ve always been aware of the magic, but for some reason I could never seem to perfect them. I’d always either try to cook them too fast and burn them, or get impatient and eat them before they had a chance to fully caramelize.

Well, I’m here to tell you that caramelized onions are Mother Nature’s gift to this Earth and you should probably make a batch every week. I scramble them into eggs, use them to top pizzas, toss them into roasted veggies, and the list goes on and on. Simply cook a few chopped onions in a little butter until they get all nice and caramel-colored, and they turn out wonderfully sweet and full of flavor. They instantly take any dish from blah to YUM!

I caramelized the onions and roasted the red peppers myself, because I had some on hand, but you can also buy roasted red peppers from the grocery store. Then, all you need is some pizza sauce and fresh Mozzarella, and you’ve got yourself one heck of a delicious pizza.

The beauty of naan pizza is that you can buy frozen naan bread (preferably of the wheat variety) and it’s ready to be turned into a personal pizza. Or an appetizer, if you’re into that whole sharing thing.

Just 15 minutes is all it takes to make this amazing homemade pizza recipe. The sweetness of the onions and roasted red peppers add amazing flavor that tastes darn near gourmet. Sprinkle with some red pepper flakes on top and go to town!

Ingredients

  • 1-2 large yellow onions, thinly sliced (depending on how much leftover caramelized onions you want)
  • 1/2 tablespoon butter
  • 1 piece Naan bread
  • 1/2 cup pizza or marinara sauce
  • Fresh mozzarella cheese, sliced
  • 1/2 cup roasted red peppers, sliced

Instructions

  1. In a medium pan, heat the butter and throw in the onions. Cook, stirring about every 5 or 10 minutes, until caramelized. This takes about an hour for 2 large onions. (I recommend doing this ahead of time ... like on a Sunday).
  2. Preheat oven to 400 degrees F and spray a cookie sheet with non-stick spray.
  3. If the Naan is frozen, bake for 3-5 minutes.
  4. Remove the Naan from the oven and spread the pizza sauce on top. Then, place the fresh mozzarella slices, roasted red peppers, and 1/2 cup of the caramelized onion.
  5. Bake for about 15-20 minutes or until the cheese is melted and the Naan is brown on the outsides.
