Oh my gosh why did it take me this long to buy an Instant Pot?! I’m sure you’ve all heard it before, but let me just confirm … this this is life changing.

Since I buy my chicken frozen from Costco, I have to remember to thaw it each time I want it for dinner. At least I did … before I bought my INSTANT POT.

Perhaps one of my favorite things about this magical machine is that you can cook chicken from frozen in little more that 10 minutes! How great is that?!

Instant Pot Greek Chicken Power Bowls

These meal prep bowls are a simple combination of shredded chicken, vegetables, hummus and feta cheese.

If you don’t have an Instant Pot, this Mediterranean chicken recipe can be made in the slow cooker. Just add all chicken ingredients to the slow cooker and cook on low for 4 hours.

I love making my own hummus because it’s super simple, budget-friendly and I can minimize the ingredients I put into it. This bowl would also be great with store bought hummus!

When I eat these, I mix them all up like a salad with the hummus as “dressing”. I absolutely love the mix of all the Mediterranean flavors.

Instant Pot Greek Chicken Power Bowls

INSTANT POT GREEK CHICKEN POWER BOWLS: HEALTHY MEAL PREP RECIPE

Ingredients

For the chicken

  • 2 lbs. boneless skinless chicken breast or thighs
  • 1 sweet onion, diced
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1 teaspoon oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary
  • 1 bay leaf
  • Salt and pepper, to taste

For the bowls

  • 2 tomatoes, sliced
  • 1 cucumber, sliced
  • 1 can artichoke hearts, drained and chopped
  • 1/2 red onion, chopped
  • 1/2 cup chickpeas
  • 1/2 cup feta cheese
  • 1 cup hummus (homemade or store bought)

Instructions

  1. Turn the Instant Pot onto sauté setting.
  1. Add 1 tablespoon olive oil and the onion to the Instant Pot. Cook until onion is translucent.
  2. Add all other chicken ingredients and stir to combine.
  3. Close the Instant Pot and cook for 10 minutes on the poultry setting.
  4. Release pressure for 5-10 minutes. Shred chicken and divide into 4 meal prep containers.
  5. Divide remaining ingredients amongst air-tight containers and store in the refrigerator.
