I’ve been super obsessed with chicken salad ever since I made this chicken salad meal prep recipe.
Since buffalo chicken is the best fall combination ever, I’ve been wanting to try a recipe like this for a while. And I’m so glad I finally did!
It’s not the most innovative recipe ever – I’ve heard of multiple people making it on Instagram. Now I know why. These Buffalo Chicken Salad Lettuce Cups are super duper easy to make and require no cooking. Score!
I like buying the smoked, fully cooked and shredded chicken from Costco. However, you can also make any quick chicken salad recipe with rotisserie chicken from the grocery store.
The addition of carrots and celery add the best crunch to this chicken salad, which is perfect served in lettuce cups.
Of course, you can also make an amazing wrap and sandwich out of this buffalo chicken salad.
Now of course I grew up on Miracle Whip and ham sandwiches, but I know some people have some weirdness about mayonnaise.
I was so excited when I first tried Veganaise. It’s a thinner consistency than some very gelatinous mayonnaise, and a more mild flavor. It’s the best mayonnaise alternative I have found!
It’s also suuuuper easy to make your own mayonnaise. Look it up!

Buffalo Chicken Salad Lettuce Cups
This Buffalo Chicken Salad Lettuce Cups recipe is quick, easy and doesn’t require cooking. It’s the perfect easy and healthy lunch recipe.
Ingredients
- 3 cups chicken, cooked and shredded (I buy it at Costco)
- 1/2 cup finely diced carrots
- 1/2 cup finely diced celery
- 1/4 cup finely diced red onion
- 6 Tablespoons buffalo sauce
- 1/2 cup mayonnaise (I use homemade or Veganaise)
- Salt and pepper, to taste
- Romaine or butter lettuce leaves
Instructions
- In a small bowl, mix buffalo sauce, mayonnaise, salt and pepper together.
- In a large bowl, mix chicken, carrots, celery and onion. Add mayonnaise mixture and stir to combine.
- Serve in lettuce cups!
