If not, I think you have to run to your nearest TJ’s and buy roughly 5-7 bags. It’s seriously so good and perfect for busy nights because it’s super easy to make.

I’ve heard from multiple people that cooking it according to the package instructions results in mushy gnocchi, so I recommend thawing it first and then frying it in a skillet.

I had some extra asiago cheese to use up, and this was the perfect way to use it. The recipe was inspired by a similar one at one of my favorite food blogs Eat Yourself Skinny.

I pretty much love any combination with asiago cheese and chicken – the two go together SO well. Asiago cheese is so full of flavor.

I like using a little bit more cheese in this recipe, but if you don’t prefer the strong asiago cheese flavor, I’d recommend cutting it down a bit.

Asiago Chicken Cauliflower Gnocchi with Sun Dried Tomatoes and Spinach

Ingredients

  • 1 bag Trader Joe's frozen cauliflower gnocchi
  • 1 tablespoon olive oil
  • 1 tablespoon garlic
  • 1 cup chicken stock
  • 1/2 cup milk (2% or half and half)
  • 1/2 cup sun dried tomatoes, chopped
  • Salt and pepper, to taste
  • 2 cups chicken, cooked and shredded
  • 2 cups spinach
  • 1/2-1 cup asiago cheese, shredded (use as much as you want depending on how strong you want the flavor)
  • 1 tablespoon arrowroot powder

Instructions

  1. Thaw cauliflower gnocchi in the microwave.
  2. Heat olive oil in a large skillet. Add gnocchi in a single layer and cook until crispy brown on both sides.
  3. Once cooked, add garlic to the pan and let cook about 1 minute. Add chicken stock, milk, sun dried tomatoes, salt and pepper and stir carefully until cheese is melted. Let the mixture simmer for about 5 minutes.
  4. Add chicken, spinach and asiago cheese and stir until spinach wilts and cheese is melted.
  5. Mix arrowroot powder with 3 tablespoons cold water. Add to the pan and stir until the sauce thickens. Serve right away.

This was outrageously salty! Even my salt loving Scandinavian American husband thought it was too salty. I spent dinner fishing the sundries tomatoes out of my bowl to reduce the overwhelming salt. Should have known with four salty ingredients for flavor (salt, stock, sun dried tomatoes and cheese). I would recommend no-salt or low-salt stock, chopping the sundries smaller than a julienne to reduce the potency per bite, and eliminating the salt from the salt and pepper step. If at serving time it needs more salt, add it then!
