The Best Grain-Free Brownie Bites

If you follow me over on Instagram, you know I’ve spent the last month getting ready to move apartments!

I moved out of my apartment in Gold Coast and into a new one in West Loop with Pat!

Moving is never fun or easy, but I have to tell you about something that made this move easier than all of my moves in the past.

One of my least favorite things about moving is having to pack in brown corrugated boxes: they’re hard to hold, hard to dispose of and not great for the environment. When I heard of RediBox, I knew I had to give them a try.

They’re plastic moving boxes that you rent for your move, and the company drops them off and picks them up to make things easier!

They’re the perfect capacity, easy to carry, neatly stack and nest, and come with a dolly with wheels to easily move around stacks of them. I’m not exaggerating when I say they made my move sssooooo much easier.

Since my new roommate is a total chocolate lover, I knew I needed to find some healthier recipes for chocolate, and these Grain-Free Brownie Bites are seriously one of the best grain-free desserts I’ve made!

They’re actually made with sweet potato, but you can’t taste the sweet potato at all!

I find that many grain-free desserts end up with a very moist and kind of mushy texture, but the sweet potato in these brownie bites give them an amazing texture that’s reminiscent of classic brownies!

The batter for these Grain Free Brownie Bites is super easy to make because all the ingredients are mixed in a blender or food processor.

Then, just pour the batter into a mini muffin tin and bake into delicious brownies!

I love that these are bite-sized because they’re the perfect portion when I want just a little something sweet.

The Best Grain-Free Brownie Bites

The Best Grain-Free Brownie Bites

Yield: 16 brownie bites
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 1/2 cup almond butter
  • 1/2 cup sweet potato, raw, minced in a food processor
  • 1 large egg
  • 1/3 cup cocoa powder
  • 1/3 cup maple syrup
  • 2 tablespoons coconut oil
  • 1 tablespoon vanilla extract
  • 1 tablespoon gelatin
  • 1/2 teaspoon baking soda
  • 1/3 cup mini chocolate chips

Instructions

  1. Preheat oven to 325 degrees F. Grease a mini muffin pan.
  2. Blend all ingredients except chocolate chips in a food processor until smooth.
  3. Pour batter into the mini muffin tin until each cup is almost full. Sprinkle the tops with more mini chocolate chips.
  4. Bake for about 20 minutes or until a knife inserted into the center of the brownies comes out clean.
  5. Let cool before removing from the muffin tin.

Notes

You can also use a 6-inch baking dish. Increase cooking time to 25 minutes.
