You only need two ingredients to make this homemade chocolate ice cream: bananas and chocolate peanut butter or Nutella. Who knew healthy ice cream could taste so good and be so easy to make?!
I can’t take credit for this magic ice cream trick, but I definitely CAN vouch for it. If you haven’t tried banana ice cream yet, I definitely recommend giving it a try. It’s so stinkin’ easy! Just cut up a few bananas, freeze them, and throw them in your food processor until they create smooth, delicious ice cream.
I added Peanut Butter & Co.’s Dark Chocolate Dreams to my ice cream, but you can add whatever you want! Peanut butter, cookie butter, honey, vanilla, or any other creation you can dream up.
If you’re craving ice cream this summer, resist the urge to binge on Ben & Jerry’s. Make this healthy banana ice cream instead!
P.S. – Don’t judge the ice cream by its scoops … I don’t own an ice cream scooper.
P.P.S. – How cool is my Smile Sandwich spoon?!
Ingredients
- 2 very ripe bananas
- 1 tablespoon chocolate peanut butter or Nutella
- 1/2 teaspoon vanilla extract (optional)
Instructions
- Cut the bananas into coins and freeze them for at least 2 hours or overnight.
- Blend the bananas in a food processor or powerful blender until smooth and creamy. This may take a while - first they look crumbly, then chunky, then finally they'll be smooth! You may need to add a dash of milk.
- Add your chocolate and vanilla and pulse until combined. Transfer to an air tight container and freeze until solid (if you can wait that long).
- NOTE: If you don't have very ripe bananas, roast bananas on a cookie sheet for 20-30 minutes in a 400 degree oven!
