These Flourless Peanut Butter Cookies might be the best cookies I’ve ever made. They’re the perfect healthy Christmas cookie, but you’ll want to make them all year round. No flour or butter!
TWO POSTS IN ONE DAY. I know, I’m crazy. But I just had to share these Flourless Peanut Butter Cookies in time for your holiday baking this weekend.
I don’t lie when I say these might be the best healthy cookies I’ve made. They’re made without any butter or flour! Peanut butter oatmeal cookies are perfectly soft and chewy and full of peanut butter flavor.
These are loaded with peanut butter, which gives them an amazingly soft yet chewy texture and just the right amount of peanut butter flavor. These aren’t dry or tasteless like some other healthy cookie recipes – trust me, nobody will be able to tell they’re healthy.

Ingredients
- 2/3 cup old-fashioned rolled oats
- 1/2 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 1 large egg
- 1 cup peanut butter at room temperature
- 6 tablespoons light brown sugar
- 1 teaspoon vanilla extract
- 1/2 cup chocolate and peanut butter chips
Instructions
- Combine the oats, cinnamon and baking soda in a medium bowl. Mix and set aside.
- In another medium bowl, mix together egg, peanut butter and brown sugar, and vanilla with a rubber spatula.
- Pour the wet ingredients into the dry and mix to combine. Next, mix in the chocolate and peanut butter chips. Refrigerate the dough for 30 minutes, or freeze it for 15 if you're in a crunch.
- Preheat oven to 350 degrees F.
- Line two baking sheets with parchment paper. Roll the dough into 1.5 tablespoon balls, place on the cookie sheets, then use a spoon or fork to flatten them down a bit.
- If the tops look greasy from the peanut butter, dab them with a paper towel.
- Bake for 9-10 minutes. They might not look completely done, but I took mine out at 9 minutes and they were perfection. Let cool completely.
