Green bean casserole is a holiday staple that really only comes around during Thanksgiving and Christmas in my family. Since recently discovering the best green bean casserole recipe ever, it’s become one of my favorite dishes to look forward to in November and December.
The creamy homemade sauce is full of flavor, and using fresh green beans gives it a homemade taste you won’t get using canned ingredients. You can make your own crispy onion straws to go on top if you want, but we just used the store-bought kind.
Either way, I guarantee this green bean casserole recipe will turn veggie haters into lovers! Even those who don’t like green bean casserole will love this dish.
Ingredients
- 3 tablespoons butter
- 12 ounces mushrooms, thinly sliced or coarsely chopped
- freshly ground black pepper, to taste
- 3/4 teaspoon salt
- 2 garlic cloves, minced
- 3 tablespoons all-purpose flour
- 1 1/2 cups chicken broth
- 1/2 cup heavy cream
- 1 to 1 1/2 pounds green beans, trimmed and halved
- store bought French fried onions
Instructions
- Heat oven to 400 degrees F.
- To blanch your beans, bring a large pot of salted water to a boil and boil them for 5 minutes. Drain beans, then plunge them into ice water to full stop them from cooking. Set aside.
- Over medium-high heat, melt butter in a 12-inch skillet. Add the mushrooms, salt and pepper and saute them until they begin to brown, anywhere from 3 to 5 minutes, depending on how they were chopped.
- Add the garlic and saute one minute more. Add the flour and stir to coat the mushrooms. Add the broth, 1/4 cup at a time, stirring the whole time. Simmer mixture for 1 minute, then add cream and bring back to a simmer, cooking until the sauce thickens a bit, about 5 to 6 minutes, stirring frequently.
- Add greens beans to sauce and stir until they are coated. Sprinkle fried onions over the top. Bake for 15 minutes, or until sauce is bubbling and onions are a shade darker.
