Mini Cauliflower Pizza Crust Pizzas

Why is pizza so great? It’s just a combination of crust, sauce and cheese. So simple, yet so irresistibly delicious. Arguably one of the greatest foods ever invented.

The problem?

It’s March. Which means swimsuit season is rapidly approaching. And some evil force of biology made pizza very un-swimsuit-friendly. Sigh.

Well, I’m here to solve all your problems with these Mini Cauliflower Pizza Crust Pizzas! The mini pizzas are so much better than making a full-sized cauliflower pizza crust because you don’t get a mushy middle. They make the perfect crust consistency, completely grain-free!

So next time you’re craving pizza but realize you’ve been eating donuts all winter (cough cough me cough), make these Mini Cauliflower Pizza Crust Pizzas! Use any toppings you like … plus aaallll the sauce and cheese.

Ingredients

  • 1 small to medium sized head of cauliflower
  • 1/4 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper (optional)
  • 1/2 cup shredded cheese (I used gruyere - Parmesan and Mozzarella work)
  • 1 egg
  • 1 tablespoon almond meal

Instructions

  1. Preheat oven to 450 degrees F. Place a pizza stone or baking sheet in the oven.
  2. Wash and chop cauliflower. Place florets it in a food processor and process until powdery and finely shredded. Transfer to a microwave-safe bowl and microwave for 4 minutes. Transfer onto a cheese cloth and let cool. Strain out all the moisture once cool and transfer back to the bowl.
  3. Add the rest of the ingredients and mix thoroughly.
  4. On a piece of parchment paper, use your hands to create four small pizza crusts, about 1/4 inch thick. Carefully transfer the parchment paper to the pizza stone.
  5. Bake crusts for about 9-11 minutes, until they begin to brown on the sides.
  6. Remove from the oven, top with pizza sauce, cheese, and toppings. Bake for an additional 5 minutes until cheese is melted. Enjoy!
