I think they might be an acquired taste, but ever since I discovered roasted beet salads, I’ve had a special place in my heart for them.
Nevermind the fact that chopping them makes you look like you just committed mass murder with your bare hands.
ThisĀ Beet Salad with Goat Cheese and Walnuts is super duper easy to make, yet looks really fancy. Serve this alongside any meal and you’re sure to get compliments from beet lovers.
I sliced the beets, but if you prefer smaller pieces, feel free to chop them. With a simple dressing, candied walnuts, and fresh goat cheese, you simply can’t beat this flavor combination. This would also be great served over arugula or spinach!

Ingredients
- 3 medium beets, washed and trimmed (not peeled)
- 1/4 cup extra-virgin olive oil
- 2 tablespoons balsamic or sherry vinegar
- 1 tablespoon honey
- 1/2 teaspoon Dijon mustard
- 1/2 cup crumbled goat cheese
- 1/2 cup chopped candied walnuts (I get mine from Trader Joe's)
Instructions
- Preheat oven to 400 degrees F. Wrap the beets in foil packs and roast on a cookie sheet until tender - about an hour.
- Remove from the oven and let cool. Slice or dice the beets. I like my salad cold, so at this point I completely chill the beets.
- In a small bowl, mix oil, vinegar, honey and mustard. Toss with beets.
- Serve the beets sprinkled with goat cheese and walnuts. Enjoy!
