These Skinny Banana Streusel Muffins are incredibly moist, sweet banana muffins with a crunchy cinnamon streusel on top! They’re the perfect healthier breakfast, snack or sweet treat.

I escaped the cold rain of Chicago this week and am currently sipping white wine in sunny North Carolina! I love visiting my mom because she’s the only one who understand my weird eating habits, and therefore plans a bunch of healthy meals for our visits.
These Skinny Banana Streusel Muffins fresh out of the oven were what we started the day with. And they are delicious!
They’re super moist and naturally sweetened with very ripe bananas and apple sauce! I’m an uber cinnamon lover, so anything with that crunchy, sweet cinnamon crumb topping is definitely on my “I want to eat you” list.
With only 1/4 cup of sugar, you don’t have to feel too guilty about nommin’ 2-3 of these per day. Ha.
Don’t worry about the lack of sugar, the natural sweetness of the bananas and apple sauce make these delightfully sweet! You won’t miss that extra sugar one bit.
So go ahead and mix up a batch of these Skinny Banana Streusel Muffins during your 3-day weekend. You won’t regret it.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 4 very ripe bananas, mashed
- 1/4 cup white sugar
- 1 egg, lightly beaten
- 1/3 cup unsweetened apple sauce
- 1/3 cup packed brown sugar
- 2 tablespoons all-purpose flour
- 1/8 teaspoon ground cinnamon
- 1 tablespoon butter, room temperature
Instructions
- Preheat oven to 375 degrees F and grease a muffin tin.
- Mix 1 1/2 cups flour, baking soda, baking powder and salt in a bowl. Beat bananas, sugar, egg and apple sauce in a separate bowl. Stir banana mixture into flour mixture until just combined. Pour into prepared muffin tin - about 3/4 full on each cup.
- Mix together brown sugar, 2 tablespoons flour, cinnamon and butter until the mixture resembles coarse crumbs. Sprinkle on top of each muffin.
- Bake 18-20 minutes until the tops are lightly brown. Enjoy!
